Will converting MOV to MP4 lose quality?

Not if the file already contains H.264 and AAC — the media is copied into the new container untouched, so the output is the same quality. Only files with other codecs, such as ProRes or HEVC, are re-encoded.

Why convert at all when the MOV already plays on my Mac?

Windows, Android, most televisions, many web players and a good deal of editing software handle MP4 more reliably. MP4 also carries no Apple-specific assumptions, which is what matters once the file has to travel.

How long should it take?
